One by Spork is pleased to announce the return of Vegetarian Monday, offered on alternating Mondays beginning June 1st. The evening follows the rhythm of our tasting counter — two welcome bites to open, six courses that move through a full flavor arc, and a dessert to close — with the menu built almost entirely from what is growing in our micro urban farm next door and from the network of local growers and producers we have cultivated relationships with across the Pittsburgh region. When the farm determines the menu, no two evenings are identical. Guests can expect dishes shaped by what is at peak, what was preserved from the season prior, and what our kitchen finds worth exploring. This is a full counter experience. Eighteen seats. A single seating at 6:30pm. Beverage pairings — alcoholic or non-alcoholic — are included. $167 per person, plus tax and gratuity. Dietary restrictions and pairing preferences are collected at booking.
